Skinny Funfetti Cake Cookies

Most of you might remember the infamous funfetti cake dip that turned out to be such a huge hit, so I couldn't just stop there of course!  The great thing about that recipe was it was simple to make and required only three ingredients.  Well guess what?  These cookies just so happen to fit in perfectly with that theme.

Three simple ingredients, thrown in the oven for about 10 to 12 minutes and voila!  You've got yourself a skinny batch of cookies that are sure to please your waistline.  Now I'm sure you may have seen these popping up on Pinterest from time to time, but that recipe calls for oil.  I wanted to make these much healthier so I substituted out the oil for yogurt, and they turned out great!!  Still moist and tasted like little cupcakes!  I used vanilla yogurt for an added sweetness, but you could always use plain yogurt and throw in a little vanilla extract in as well.  Either way, I think you'll just love these!!

One note I'd like to mention is make sure to keep these covered after baking if you aren't planning on serving them right away.  They do dry out quickly if left out on a plate overnight so keeping them in a container helps to retain their moisture and keep them nice and cake-like.

Here are your ingredients:
Recipe adapted from Duncan Hines 

1 (18.9 oz) box Funfetti cake mix
1/2 cup fat-free vanilla yogurt
2 eggs

Preheat oven to 375 degrees F.  In a medium bowl, combine funfetti cake mix, yogurt and 2 eggs and mix until all clumps are gone.  Drop by tablespoonfuls onto a cookie sheet greased or covered in tinfoil and bake for about 10 to 12 minutes, until cookies are slightly browned on the bottoms.  Enjoy! 

*Just a hint: I know a lot of you LOVE using Greek yogurt because of how healthy it is, however it does have a more sour taste to it so keep that in mind if you choose to use it in these cookies.  I used Yoplait fat-free vanilla yogurt and they came out great!

These would be perfect for any child's birthday party or even for the men in your house!  Chris has already requested these again simply because he loves them so much, and I didn't even tell him I took out all the oil!  Feel free to throw in more sprinkles for even colorful cookies.
